Dovecot always automatically stops working after hours or days it starts again, what can I do so that this does not happen again. I give to start, repair and restart and nothing.

One of its functions is to work as a system and service manager for Linux. In this capacity, systemd controls how a service should behave if it crashes or the machine reboots. You can read about systemd’s systemctl here.

Your problem is caused by the loss of some socket files

Are there any security software or scheduled tasks installed on your server that will affect the socket communication files in /var/spool/postfix/private/dovecot-lmtp?
